Moving Day!

We moved last Saturday to our first house!! We are super excited and it already feels like home. I will post pictures of it later, but here are some of us and our helpers moving all our things.

Lots of boxes...all of those are for the kitchen. I was able to fit all of my kitchen items in the kitchen AND have extra room. That has never happened to me before!!!!

For a housewarming gift my brother and sister-in-law, Kev, Bonnie, Jasper & Carter, gave us a candle and cookies. Lets just say the cookies were made the first night in our new home and were very delicious. Thanks! I will be posting pictures of our house without all the boxes eventually. I guess we will see how long it takes me to organize them all. :)

Recipe: Ranch Chicken Enchiladas

I like to try new recipes to try to expand my list of meals that I can make. I feel like I have the same meals that I make all the time and hope to slowly grow that list to have more choices. This recipe is beyond delicious. Curt isn't a big fan of Mexican food. He likes some, but it isn't his first choice. Lets just say this recipe is a hit. Its also very, very easy. I didn't take pictures of me making them because both hands are needed, but the first time I made this they turned out awesome so pictures aren't really needed.

Ranch Chicken Enchiladas

Just posting this picture makes me want to make these again....just figured out a meal for this week!
Servings: makes about 10 enchiladas
 Ingredients:
  • 3-4 boneless, skinless chicken breasts
  • 1 package chicken taco seasoning
  • 1 package dry ranch salad dressing
  • 1/2 cup bottled ranch
  • 1/2 cup salsa
  • 2-4 cups shredded cheddar cheese (depending on how much you love cheese)
  • 1 can chicken broth
  • 1 package white flour tortillas (10 count)

Directions:

  • Combine chicken breast, chicken taco seasoning, dry ranch salad dressing, and chicken broth in a crock pot. Cook on low for 3-4 hours. Once cooked shred meat.
  • Combine bottled ranch and salsa in a bowl. Set aside.
  • To assemble: Put 2 Tbsp of ranch and salsa mixture in the middle of a tortilla. Top with shredded chicken and sprinkle with cheese. Roll up and place in 13"x9" pan. I can fit all 10 enchiladas in one pan.
  • Once all of your enchiladas are in the pan. Cover with shredded cheese. This is when the 2-4 cups depends on how much you love cheese. I like to make sure every inch is covered so we lean toward using 4 cups.
  • Bake at 350 degrees for 30 minutes.
  • Drizzle the top with ranch and serve!

Kristy's Birthday

October 25th was Kristy's birthday and we got together and celebrated the following Sunday. It's always fun to get together with family and this day didn't disappoint.

Trick or Treat!

Last Saturday night I went with my sister-in-law, Kristy, to take her kids trick or treating at the firehouse in Thayer. I had a full day of nephews that day, but loved every second! It was so much fun to see them dressed up in their costumes. Colton dressed up as the Teenage Mutant Ninja Turtle, Raphael, and Grayson dressed up as Elmo.

 To get candy Colton had to play some games. Plinko was his first choice.

Dairy Farm & Pig Adventure

Last weekend Curt and I went to the dairy farm with my parents, Bonnie, Kevin, Jasper and Carter. We had never seen the pig adventure and it was really cool to see! It was also fun to spend the day with our nephews. Here are some pictures from our fun day out.

Jasper sure loves his tractors. He can even name the different tractors which I find impressive. I'm thinking he will grow up and work in agriculture. :)

I recommend everyone to go see the pig adventure at Fair Oaks. I like the pig adventure because it is all in one building and you can walk around and view the different areas. It was fun for the kids and us!
